The Tenuta di Roncolo is home to one of the largest and oldest vinegar cellars in Emilia, the historic Acetaia di Canossa, dating back to the 17th century. Our brand was born from the desire to celebrate the deep bond between the art of balsamic vinegar making and the storied life of Countess Matilde di Canossa, whose spirit of strength and heritage still resonates through every drop.
